What's not to love about some Shortbread this time of year. They're great for a good dunk'in your cup of tea and ideal for when you have visitors around your house this festive period. The Shortbread are soft, buttery and light enough that you don't feel over indulged. You can be as creative as you want with these, I had a Christmas Tree cookie cutter to hand so I used that but if you don't you can cut out any shape you fancy with a sharp knife (the cookie cutter just makes it easier). Ingredients
200g softened butter
200g plain flour
100g caster sugar
100g cornflour

Method
First off put the sugar and butter into a bowl and mix together until light and fluffy
Pop in the plain four and cornflour and give another good mix until well combined
Sprinkle some flour onto your surface and place the mixture on top
Knead until the dough is nice and soft
Using a rolling pin, roll out the dough to the thickeness of approx 1cm
Cut out the shortbread to whatever shapes you fancy with a cookie cutter or knife
Line a baking tray with baking parchments
Place the shortbread on your baking tray and into the fridge for 30 minutes to chill
If you have any left over dough, re-roll, cut out shapes and chill
Then pre-heat your to 170°
Bake for 20 minutes
Once baked, leave to cool before decorating

For the Decoration 
Melt some milk chocolate in a bowl
Spoon the chocolate on half of the shortbread (or all - why not?)
Then sprinkle some hundreds and thousands on top
and you're DONE!
