Fidget Spinners are everywhere at the moment so I thought why not have them on #BakingWithKevin so I made Fidget Spinner Cookies!
Makes 12 servings
FIDGET SPINNER COOKIES
Ingredients
- 80g unsalted butter
- 75g granulated sugar
- 140g plain flour
- 1 egg
- 1 tsp vanilla extract
- 1 tsp salt
- 1/4 tsp baking powder
- pinch of salt
METHOD
- In a large mixing bowl beat the butter until nice & creamy.
- Beat in the egg and vanilla extract until light and fluffy
- Pop the salt, baking powder & 1/2 the flour mix into the mixing bowl and beat until just combined
- Add the rest of the flour and slowly mix until just combined.
- Pop the cookie dough onto a lightly floured surface.
- Roll out the dough to a 1/4 inch thick, then pop into the fridge to chill for approx 1 hour.
- Once chilled, using the fidget spinner cookie template (download below) cut out the cookies
- Place onto a baking tray lined with baking paper.
- Using a round piping nozzle create three holes in the cookies.
- Bake in the oven on 170C or 350F for 8-10 minutes.
- Once baked, allow to cool completely.
- Once cooled, use the coloured icing to pipe out the fidget spinner design on top.
- Enjoy!
