SALTED CARAMEL BROWNIES

I tried this recipe ages ago but have recently seen tons of pictures
floating around the internet of salted caramel brownies so I thought I
would give it another go! I made my own caramel last time I made these
but didn't notice any difference in flavour by opting for the easier
route and using canned caramel. It is ideal if you have a sweet tooth as
it is very sweet and indulgent!






INGREDIENTS
225g Caster Sugar
125g Plain Flour
25g Cocoa Powder
225g Butter
200g Dark Chocolate
4 Eggs
1 Tbsp Espresso
1 Can of Caramel
Pinch of Salt
METHOD
Start by Pre-heating yoru oven to 180C/350F/Gas mark4
Grease and line a 8inch/9inch tin
Melt the butter in a pan on low heat, slowly mixing
Once all melted add in the dark chocolate, continue to stir until that has melted
Take the pan off the heat and allow to cool
Add the butter and dark chocolate mixture to a mixing bowl with the caster sugar and mix well
Next add in the 4 eggs, giving another good mix
Sift in the plain flour and cocoa powder again giving a good mix
Finally add in the espresso and beat fast for 1 minute


Add half of the brownie mixture into the prepared baking tin, then
dollop 3/4 of canned caramel on top, squishing it down with a fork
Add a sprinkle of salt
Add the rest of the brownie mixture on top, finally adding the remaining 1/4 of canned caramel
Finishing it off by using the back of a fork to create an edgy design!
Bake in the oven for about 25 minutes
Once cooked allow to cool (put it into the freezer to speed up this process)
Cut the brownie into squares and serve!
