BANOFFEE PIE

Banoffee Pie is legit one of my favourite desserts, I don't make it that often as the fam aren't big fan's so it's down to me to finish it off every time (which I do). But I have recently just made it and thought I would share the recipe with you all as it is an all time favourite of mine! YOU WILL NEED
1 X round pie dish

INGREDIENTS:

BISCUIT LAYER
200g Digestive Bicuits
100g Melted Butter

CARAMEL LAYER
1 CAN OF CARAMEL or 400g of Homemade Caramel

BANANA LAYER
2 ripe bananas

CREAM LAYER
300ml Whipping Cream
1 Tbsp Icing Sugar
1-2 drops of Vanilla Extract

Optional
25g Grated Chocolate

 METHOD

First start by making the base
 Crush the digestive biscuits into fine crumbs using a rolling pin
In a bowl add the melted butter & digestive biscuit crumbs mixing well until combined
Spoon this mixture into your pie dish, press it down into the dish
Pop it into the fridge for 30 minutes

Meanwhile make get the caramel ready by scooping it into a bowl and mix until smooth

Then, chop the 2 bananas into small slices and set aside

Add the whipping cream, icing sugar and vanilla extract into a bowl and whisk fast until it begins to thicken
Once the base has firmed up in the fridge, take it out
Spoon the caramel onto the base, spread it out with a spatula
Then, place the bananas on top of the caramel
Slowly pour the whipped cream on to the bananas
Finally grate some chocolate on top!
