If like me you want to make baking as simple and easy as possible then follow this VERY simple apple pie recipe I just baked, head on over to my Youtube channel if fancy a watch of me baking the Apple Pie.

2 X Jus Roll Sweet Shortcrust Pastry 320g
As I said above I like me make baking easy, so sometimes I use shop bought just roll pastry
If you fancy the challenge of making your own pastry then try this recipe out below which I have used alot
Shortcrust Pastry ingredients
250g plain flour
125g butter
2 egg yolks
1 tbsp caster sugar
pinch of salt
Shortcrust pastry method
Using your hands, rub together the flour and butter until it resembles crumbs
Add the egg yolks, sugar and salt and mix until well combined
Using your hands, squidge together the mixture into a ball - add some milk/water if the mixture is dry
Once squidged into a ball, place in the fridge for 30 mins
Remove from the fridge once rested, warm up in your hands and you're ready to roll it out!
Once your pastry is ready whether shop bought or homemade, start by dusting your rolling pin and worksurface with some plain flour
Roll out your pastry until it's thickness is about the same of a £1 coin or 1/2cm
Gently roll your pastry onto your rolling pin then unroll it over your pie dish
Press the pastry into your dish around all the sides (for now leave pie dish to one side)
Then roll out pastry for your top layer, you can follow my lead and try some "lattice" which isn't as hard as it looks or ultimately just completely cover pie with pastry on top
Once you have again rolled the pastry out until the thickness is 1/2cm ish, if covering pie with lattice design then cut into long rectangles about 1/2 inch wide
If not trying lattice then for now leave top layer of pastry to one side
Now begin to make the Apple filling!
Apple filling ingredients
1 cooking apple
4 eating apples (I used braeburn)
3 tablespoons muscovado sugar
1/2 teaspsoon cinnamon
zest of 1/2 orange + few squeezes
Start by peeling your Apples, then core and chop into small chunks
Then, simply all apple chunks, sugar, cinnamon into a pan on medium/low heat

Grate 1/2 zest of orange plus squeeze some orange juice in and slowly mix ingredients together
Simmer for 5 minutes or until Apples are tender but not mushy
Remove from heat and allow to cool
Pour the apple filling into your pie base, spread evenly so the base is covered
Cover the Apples with your top layer of pastry (if your trying 'LATTICE' then check out my baking video here as I go in detail how to: lattice)
Press the edges of the pastry together to seal it, if you have completely covered your pie in pastry, make some incisions with a knife in the centre to allow steam to escape
Finish by whisky an egg and splash of milk in a bowl and using a pastry brush to light coat the pastry
Pop in the oven for 40 minutes
Once baked, allow to cool and SERVE!
I like to eat mine with vanilla ice cream but custard is also a family favourite too
