Gingerbread Pancakes

I usually eat porridge all week for breakfast but on the weekend I like to sometimes have Gingerbread pancakes as a sweet treat! I was put off at first by the "Gingerbread" part as usually I just have normal plain pancakes but honestly they're next level. They couldn't be easier to make, I can whip them up and be eating them within 15 minutes now. Serve with a little maple syrup for some sweetness.

Ingredients

300ml milk
1 egg
220g self raising flour
1 tsp baking powder
3 tbsp light brown sugar
1 tsp cinnamon
1 tsp ginger
1/2 tsp vanilla extract
pinch salt
olive oil for pan

Method

Start by adding the flour, baking powder, cinnamon, ginger, vanilla extract and salt into a bowl and mix
Pour in the milk slowly, mix until well combined
Finally add in the egg and beat the mixture until all lumps dissappear

Heat a drizzle of olive oil on your frying pan
Slowly pour roughly 2 heaped tablespoon of mixture onto your pan, lower the heat
Allow the pancake to cook until bubbles appear on top (approx 5 minutes)
(if your pan is big enough, cook more than 1 pancake at a time)
Once cooked on the bottom, flip over and cook the other side
Once cooked on both sides... enjoy with some maple syrup!
