CUPCAKES
Ingredients
- 120g self raising flour
- 100g caster sugar
- 100g butter, softened
- 2 eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
- food colouring: blue, green & purple
BUTTERCREAM
Ingredients
- 250g icing sugar
- 125g butter, softened
- 1 tsp vanilla extract
- 1 tbsp milk
- food colouring: blue, green & purple
YOU WILL ALSO NEED
- fondant icing: white, black & blue
- cupcake tray
- 12 cupcake cases
- piping bag & grass nozzle
LETS GO!
- Pre-heat oven to 150ºC or 300ºF.
- In a large mixing bowl mix together the flour, sugar, butter, eggs, baking powder & vanilla extract until well combined.
- Divide the mixture evenly into 3 bowls.
- Add a few drops of food colouring into bowl and mix until dyed blue, green and purple.
- Line a cupcake tray with cupcake cases. Fill the green cases 2/3rd full.
- For the Sully cupcakes, add 1 tsp of blue mixture, then 1 tsp of purple, another layer of blue mixture and finish with 1 tsp of purple mixture.
- Bake in the oven on 150C or 300F for 20 minutes.
- To make the buttercream, add the icing sugar, butter, vanilla extract and milk to a large mixing bowl and beat until smooth and creamy.
- Divide the buttercream into 2 separate bowls and with the food colouring dye blue, green and purple.
- Roll out the fondant icing and cut out 1 large white circle, 1 smaller blue circle, 1 even smaller black circle and 1 tiny white circle. Stack them together the large white circle first, then blue, then black and top with the tiny white circle.
TO DECORATE
Mike Cupcakes
- Once baked and cooled, lets decorate.
- Frost Mike cupcakes with green buttercream. Use a small spatula to smooth.
- Place Mike's fondant eye right in the middle of the cupcake.
Sully Cupcakes
- Place blue and purple buttercream in a piping bag with grass nozzle.
- Pipe blue buttercream and small patches of purple buttercream onto cupcake.
- Enjoy.
