Millionaires Shortbread

I have just got back from a few days in Conwy, whilst there by brothers
mate brought along some Millionaires Shortbread after I devoured a fair
few I was convinced these treats are something I should share on my

You will need:

13inch X 9inch baking tin

Ingredients

The Shortbread
250g plain flour
75g caster sugar
175g softened butter

The Caramel
100g dark brown sugar
100g butter
2 cans of condensed milk

Chocolate Topping
250g dark chocolate (at least 50% cocoa solids)

Method

First pre-heat your oven to 180C/Fan 160C or Gas 4
Grease a 13inch X 9inch baking tin
To make the shortbread, simply mix the flour and caster sugar together in a large bowl
Next, add in the butter rubbing the mixture through your hands until it resembles breadcrumbs
Press the mixture onto the base of your prepared baking tin, bake in the oven for 20mins

Once baked leave the tin to cool
Tomake the caramel, add the butter, dark brown sugar and condensed milk
to a pan heat until the sugar has dissolved. Boil the caramel mixture
until all sugar well dissolved, then simmer mixture continuously
stirring as the caramel easily burns on the bottom of the pan, do this
for about 5 minutes until the mixture is creamy and thick
For the topping simply melt dark chocolate
Add the caramel to the shortbread layer, then simply pour the melted chocolate on top
Place in the fridge to set
Once set cut into squares and serve!
