Rocky Road Bars

So with this miserable weather I need something to cheer me up, enter rocky road bars. So easy to make with no baking in the oven involved you really can't get an easier recipe! I was so impressed with how this batch of Rocky Road Bars turned out I didn't remember them tasting so good! I have left the recipe below if you want to try them out! If you do let me know how they turn out!








Ingredients:

200g Digestive Biscuits
150g Mini Marshmallows
125g Butter
300g Dark Chocolate (70% cocoa)
3 Tbsp Honey


Method:

First off crush most of your biscuits into crumbs but leave a few larger chunks
Next, melt the butter, dark chocolate & honey in a pan on medium heat, keep stirring onto all the chocolate has melted and the mixture is nice and smooth
Scoop out half of the chocolate mixture and combine it to the biscuits (leave the other half for later)
Then mix in the marshmallows
Spoon the mixture into a 8 inch by 8 inch baking tin lined with baking paper
Pat the mixture down
Finally pour the remaining dark chocolate on top and give another pat down!
Cool in freezer for 1 hour or Fridge for 2 to Overnight
Once set cut into rectangles and SERVE!
